AOC Corbieres terroir de Fontfroide

Type of soil black clay facing due south and dominating the village of Bizanet.

Blend of the two red varieties: 90% Carignan and 10% Syrah

Picking is done by hand on the oldest parcels of land preserving the integrity of the grapes which after are checked again before being put into vats.

The carbonic maceration which follows is very carefully monitored. The wine is then transferred to oak vats where it matures for 12 months.

The robe is a deep dark red and the flavour is a rich concentration of tannin mixed with ripe fruits and scents from the garrigue.

Improves with age and can be stored from 5 to 8 years.

Blanc 2000

AOC Corbières Terroir de Fontfroide

Type of soil:dark clay,vineyards facing due south dominating Bizanet.

Blend of 3 varieties: Roussane 40%, Marsanne 40%, Grenache 20% with each variety separately vinified.

In the first instance the grapes are left whole on the press to safeguard the flavours and aromas before pressing, then the Marsanne and Grenache are vinified in stainless steel vats. The Roussanne is put into oak vats.

This wine captures the concentrated aromas of fruits, vanilla scented pathways of the woods.

Suggested accompaniment to fish and seafood dishes and should be drunk within 3 years.

The ‘SCEA des Vignobles Vie – Barsalou’ manage three family owned estates in the terroir of  Fontfroide in Bizanet which comprise a total of 85 ha.

-         the Chateau Aumedes

-         the Domaine de l’Ancien Prieure de St Amans

-         the Domaine de St Maurice

Six generations have worked on these three estates using Carignan, a Mediterranean grape variety, famous for giving the full body to the different wines of the Corbieres.

The aromas are a result of the coming together of the Syrah, Grenache and Cinsault varieties with more than a hint of the wild garrigue.

The soil too plays an important part.

The vines of the Chateau Aumedes which dominates the village are planted in the dark clay soil which produce strong red wines which are aged in oak for about 6 to 9 months after vinification and keep well for up to 8 years. The cuvee ‘Emilien Raissac’ named after the present owner’s great grandfather is just one example.
