Cellars of l'Aussou

This cave cooperative founded in 1935
with a handful of wine growers replaced the old railway station that served the
Corbieres. As time goes on and under a succession of different management teams
the cave continues to prosper and produce wines of quality.
The AOC Corbieres classification in 1986
was the ultimate reward for their efforts.
In 1997, the cooperative of St Andre de
Roquelongue, a neighbouring village, combined forces and it became known as the
Cellars of l’Aussou named after a watercourse running between the two
communities.
Today, the 302 people involved produce about 55,000 hectolitres of wine.
The Wines
Chef de Bien, red and white
Vinification: carbonic maceration matured in oak vats
Terroir: Fontfroide
Varieties:
Red, Carignan/Grenache/Syrah
White, Grenache blanc
Characteristics of the red: full strength with a touch of vanilla. Long lasting and powerful finish.
To accompany meat dishes in sauce, game and flavoursome cheeses
Characteristics of the white: oily and round to start, full of character with a long finish.
To accompany fish dishes and fromage blanc.
Mont Cal, red
Vinification: carbonic maceration
Terroir: Fontfroide
Varieties: Grenache/Syrah/Carignan
Characteristics: round, full at the
start with hints of red berries, then the tannin kicks in at the end.
To accompany meat dishes and barbeques.

Characteristics: rich and smooth,
‘feminine’ finish.
